Sunflower Breakfast Muffin Recipe

Oat muffins

2 cups all purpose flour
1/2 cup quick or old-fashioned oats, uncooked
3 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon nutmeg
1/2 teaspoon salt
Grated rind of 1 orange or lemon (optional)
5 tablespoons cold, sunflower margarine
1/3 cup toasted sunflower kernels
1 can (11 ounce) mandarin oranges, well-drained
1/2 cup milk

Method

  • Preheat the oven to 425 degrees Fahrenheit. Drain the can of oranges and set aside. In a bowl, mix the dry ingredients together and add the orange rind.
  • Rub the margarine into the mixture until it is crumbly and then stir in the sunflower kernels.
  • Add the oranges and milk to the dry ingredients and knead together to form a dough.
  • Divide the dough into small pieces and pat into a circle on a floured surface.
  • Place each round of dough on a greased baking sheet.
  • Brush egg white on the top and sprinkle with sugar before placing in the oven.
  • Bake the muffins for 18-20 minutes until golden brown.

Serve with milky coffee or hot chocolate and enjoy!

As well as all the health benefits sunflower oil is famous for, it can also be used as a clean burning alternative fuel. Sunflower Oil in Biodiesel can be blended with petroleum diesel to create a biodiesel fuel from domestic, renewable sources.

Is sunflower oil in biodiesel a good choice for the environment?

Unlike petroleum fuel, sunflower oil in biodiesel is clean, biodegradable, non-toxic, mostly free from aromatics and sulphur, and can be used in a typical diesel engine with very little or even no modifications. With ever increasing pressure on all countries to clean up their act and do their bit for the environment, research into biodiesel as an alternative to environmentally polluting fuels such as petroleum and regular diesel is essential.

The chemical properties of sunflower oil make the use of sunflower oil in biodiesel a very viable alternative to more traditional fuels. Sunflower oil is one of several oils that are suitable for use in biodiesel fuel. Others include soybean oil, palm oil, canola oil, and tallow. All oils must be refined in a process known as transesterification and sunflower needs to be de-waxed before it can be blended with diesel to create biodiesel.

One of the big advantages of sunflower oil production is the high yield of oil from the seeds. On average, 600 pounds of oil are produced per acre of crop, which is far higher than a comparable crop of soybeans. The high yield makes sunflower oil production for biodiesel purposes a viable business opportunity for small processing facilities, although smaller facilities for pressing oil are usually less economic.

In some parts of the world, notably the United States, sunflower oil is priced too high for economical use in biodiesel production due to the demand for sunflower oil in the food processing industry. In such cases, soybean oil and canola oil offers a more economical alternative. Given its excellent qualities for use in biodiesel production, it is unfortunate that the prohibitive cost of sunflower oil makes it a less economic choice as a feedstock for large scale biodiesel production.

In order to attract certain tax benefits, many vehicles in the United States running on biodiesel fuel use a blend of petroleum diesel and pure biodiesel fuel. Typically this is 80% petroleum diesel to 20% biodiesel. In the UK, the Renewable Transport Fuel Obligation means all transport fuel must include 5% renewable biodiesel fuel.

Vehicles can operate on pure biodiesel, but they need certain modifications first. Once a vehicle has been switched over to pure biodiesel, fuel filters can become clogged, so it is recommended that these are changed soon after the switch has been made.

As well as road transport, there is also a great deal of interest in biofuels for rail transport in the UK and Virgin Trains introduced the world’s first biodiesel train in 2007. It has been claimed that the train will save 14% of direct emissions, which can only be a good thing for the environment. Biodiesel has also been used as heating oil in domestic and commercial boilers.

Replace bottles of sunflower oil regularly as the oil deteriorates quite fast once it has been opened, which negates the health benefits found in sunflower oil, and always store sunflower oil in a cupboard as it will keep for longer.

Sunflower Oil Baking – Cakes

Chocolate Brownies

Ingredients

170g self raising flower
Pinch of salt
2 tbsp cocoa powder
170g caster sugar
5tbsp sunflower oil + extra for greasing the pan
230ml sweetened soya milk
1 tsp vanilla extract

Method

Preheat the oven to 180 degrees Celsius. Grease and flour a 20cm square baking tin using the extra sun flower oil.

Sift together the flour, salt, cocoa powder, and sugar in a bowl. Add the oil, soya milk, and vanilla extract, and mix together carefully until the ingredients are fully incorporated.

Pour the mixture into the tin and bake in the oven for approximately twenty five minutes, or until the brownies spring back when gently pressed.

Leave to cool for a few minutes and then turn out on to a wire rack. Enjoy warm with ice cream or fresh cream, or eat cold as a tasty snack.

Afternoon Tea Cake

Ingredients

125g mixed dried fruit
75ml brandy, cointreau, or whiskey
200g butter, plus extra for greasing the tin
1tbs sunflower oil
3 eggs
250g flour, sifted
1tsp baking powder
Pinch of salt
Icing sugar for dusting

Method

Preheat the oven to 180 degrees Celsius. Line the base of a 20 inch cake tin with greaseproof paper and rub some butter around the sides to grease it well.

Place the dried fruit and alcohol in a saucepan and bring to the boil. Let the mixture simmer for a few seconds and then pour into a bowl to cool.

Beat the butter in a large bowl until soft and fluffy. Add the sugar and beat well. Add the oil and eggs one by one, beating constantly. This step is easier is a food mixer is used, although an electric hand mixer will be fine.

Sift in the flour, baking powder, salt, fruit and alcohol mixture and then transfer it into the prepared cake tin. Smooth the top of the mixture and bake at the top of the oven for approximately fifty minutes until a skewer inserted into the bake comes out clean.

Leave the cake to cool for a few minutes before removing from the tin and placing on a wire cake rack. Once the cake is cool dust it lightly with some icing sugar.

How to grow sunflower plants for kids

The first and most essential thing you need for growing sunflowers is some seeds! There are several different varieties of sunflower, so make sure you choose one that is appropriate for the space. Giant species include Russian Mammoth and American Giant. Dwarf species of sunflower include Music Box and Teddy Bear, and these are ideal for growing in tubs on patios or in large window boxes.

How to grow sunflower plants from seed

If you want your seeds to grow successfully, you need to wait until the last frost has gone and the ground has thawed. The seeds are best soaked overnight in some warm water prior to planting.

The next step is to choose the best location in the garden. Sunflower plants like sun, hence their name, so ideally they should be planted where they can enjoy at least 6-8 hours of full sunlight (or good light if the weather is lousy). They are also best grown against a wall or fence so you can tie the stems to a support as they grown. The growing plants will also prefer to be sheltered from strong winds.

When you are ready to plant the seeds, dig some holes around 5cm deep and 15 cm apart, although this might vary depending on the seeds, so always check the packet for detailed instructions.

Once you have planted the seeds, keep them watered and watch out for shoots appearing after a couple of weeks. If you suspect that something is munching on the shoots, you can protect them with a plastic tube around the shoots. If the weather is dry, make sure the growing plants are well watered at least once a day.

Once the seeds have been planted, they soon grow fast and tall, so they will need supporting at regular intervals to make sure they do not begin to slump under the weight of the flower head. Watching your sunflowers grow is wonderful entertainment for children and they will soon notice how the sunflower head tracks the sun throughout the day.

By the time summer ends and the sunflower head has turned brown, the sunflower seeds can be harvested. The sunflower head should be cut from the plant leaving enough stem to enable the flower to be hung up to dry out for two weeks. When the flower has completely dried out, the seeds can be loosened and removed. Keep some to plant next year and the rest will make a tasty snack for the wildlife and the family.

The birds and squirrels will enjoy a tasty seed cake made with lard, while the kids will enjoy roasted sunflower seeds baked in a hot oven!

Ingredients

1 cup all purpose flour
1 cup whole wheat flour (or all purpose)
1/2 cup firmly packed brown sugar
1/3 cup raw sunflower seeds
3 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 1/2 cups finely shredded carrot (about 2 medium-size carrots)
1 can (8 oz) crushed, unsweetened pineapple, with liquid
1/2 cup skimmed milk
1 large egg, slightly beaten
2 tablespoons sunflower oil
1 teaspoon vanilla extract

Method

Preheat your oven to 400 degrees Fahrenheit. Place 12 paper muffin cases on a tray or coat a 12 cup muffin pan with non-stick cooking spray. In a large bowl, combine the flour, brown sugar, sunflower seeds, baking powder, cinnamon, and salt. Mix until ingredients are thoroughly combined.

In separate bowl, combine shredded carrot, crushed pineapple and its juice, milk, egg, sunflower oil, and vanilla.

Make a deep well in the centre of the dry ingredients. Pour the carrot mixture into it. Mix with a large spoon just until the dry ingredients are combined. Do not beat or overmix.

Carefully spoon batter into each muffin cup or paper case, making sure that you fill each one approximately 3/4 full. Bake 20 to 22 minutes or until golden brown and a skewer or fork inserted in centre of the muffin comes out clean. Let muffins cool in pan 5 for minutes. Remove from pan; cool completely on a wire rack or serve warm.

Wheat Bread – this recipe makes two loaves.

Ingredients

      2 3/4 cups bread flour, plus extra for kneading

 

      2 cups hot water

 

      2 packages (1/4 oz each) active dry yeast

      2 cups whole wheat flour

 

      1 cup quick or old-fashioned oats, uncooked

 

      1/3 cup instant, non fat dry milk

 

      1/4 cup sunflower oil

 

      1/4 cup honey

 

      1 teaspoon salt

 

    1 cup raw sunflower seeds

Method

In a large bowl, combine bread flour, hot water, yeast, and sugar. Beat with an electric mixer on low speed for 3 minutes. Cover with a damp towel and let rise in warm place until double, about 30 minutes. Stir in the whole-wheat flour, oats, dry milk, sunflower oil, honey, and salt. Mix well. Stir in the sunflower seeds.

Turn dough out onto floured board and knead in enough bread flour to make moderately stiff and elastic dough, about 6-8 minutes of kneading. Shape into a ball and place in a greased bowl. Cover and let rise until double, about 30 minutes.

Punch the dough down and turn out onto a lightly floured surface. Divide the dough in half. Cover and let rest for 10 minutes.

Preheat oven to 375 degrees Fahrenheit. Shape dough into 2 loaves and place in 8 x 4 x 2 inch loaf pans. Cover and let rise until double, about 30 minutes. Uncover and bake for 35 minutes or until bread makes a hollow sound when tapped in the middle. If top of bread darkens too much, cover with aluminium foil for the last 15 minutes of baking. Remove from pans and cool on wire rack.

Note: This recipe can be used in a bread machine as well. Simply follow bread machine directions for adding wet and dry ingredients and bake as directed above.

Directions

Place the pepper halves cut side down on the baking sheet. In a bowl, mix the olive oil, lime juice, balsamic vinegar, rosemary, salt, and pepper. Brush peppers with the olive oil mixture.
Roast peppers under the grill for 5 minutes, or until slightly charred. Remove from heat, peel, and slice. Toss with the toasted sunflower seeds to serve.

Ingredients:

2 Tablespoons sesame oil
2 teaspoons minced fresh ginger

1 pound chicken breasts, cut into bite-size pieces
